Summer Garden Fish Tacos

My NY resolution was to try one new recipe per week. It's really upper my cooking game and broadened my food horizon! This is a new favorite!

4 Cod fillets (can use tilapia)
1 ear sweet corn
1 poblano pepper
1 zucchini
1 medium heirloom tomato
1/3 C chopped red onion
3 T fresh cilantro
1 t grated lime zest
3 T lime juice
8 taco shells
1/2 medium avocado

On a lightly oiled grill, grill corn pepper until tender. (Approx 10 minutes)
Sprinkle fish with salt. Grill fish and zucchini until fish is flaky and zucchini is tender. 7min -ish.
Cut corn off cob, place in bowl. Chop veggies and add them in. Stir in zest, juice and chopped cilantro.
Serve fish in taco shells, topped with veg mixture and chopped avocado.
