Appetite destroying Beans & Rice

2 cans Dark Red Kidney Beans
1 can Black Beans
1 can Black Eyed Peas
½ yellow or sweet onion, diced small
½ green bell pepper, diced
½ red bell pepper, diced
1 can mushroom pieces & stems
½ cup water
1 tsp brown sugar
1/8 tsp salt
½ tsp garlic powder
½ tsp chili powder
½ package smoked Turkey Kielbasa sausage, diced very small so each bite gets some meat.
2 packages Uncle Bens quick Long Grain & Wild rice (or your favorite)

In large pan, empty 1 can red beans, add the water, sugar, salt, garlic, chili seasonings and bring to a simmer. Mash with fork until very creamy & thick soup texture, adding more water if necessary.

Add the rest of the ingredients except the rice. Heat over medium heat, stirring frequently to prevent burning until simmering or slow boil.

Prepare uncle bens rice packs per directions, rip open slit and microwave for 1 minute each. Dump into the beans mixture. Stir together, serve.


This will make 9 (huge) 1-cup servings, which should completely fill any of us with a sleeve or bypass. Spice level is very low; add your own heat source.
1-cup serving: 312 calories
Protein: 18 grams
Fat: 3 grams
Carbs: 57 grams
Fiber: 13 grams (lowers effective calories to 261)
My girls like adding a dollop of sour cream.
Freezes in Tupperware very well, microwave for instant meal.
