2-3 lb. Beef Roast - Rump or Round work best
1 Onion, Finely Chopped
3 Garlic Cloves, Minced
28 oz Can Stewed Tomatoes
1/2 C Red Wine (can sub. Beef Broth)
3 T. Tomato Paste
1 t. Basil
1 t. Oregano
2 Bay Leaves
2 t. Salt
Place ingredients in slow cooker on Low for 8 hours. Beef will shred easily and mix into sauce. This is another one that freezes well.
I like it over a mashed potato/cauliflower blend. But you can do quinoa, pasta, polenta .. whatever.
