Cauliflower buffalo wings

I am going to make this tonight. I have one recipe from one place that's really simple. You just beat two eggs, bust a head of cauliflower up into florets, dip in the beaten egg, roll in Panko bread crumbs. Bake at 400 for about 25 minutes.

But I found another recipe that sounds better to me, though it might have more calories. I will enclose screenshots because that's the only way I could copy it.

It didn't turn out that great for me. I had to make my own buffalo sauce and it didn't taste as good as I wished it did. And then I made the dipping sauce out of yogurt and milk and Dill weed and a little ranch dressing. I've only had chicken wings once or twice in my life but I have to say I would have been just as happy with roasted cauliflower, which I love. And I wouldn't have needed the sauces.

I also roasted chicken whole, which I have not done for probably 15 years. I haven't eaten chicken skin or bones since I had surgery 13 years ago. I was inspired by a recipe I saw on Instagram but it turned out much better for her than it did for me. So much fat and oil in the drippings! Kind of pretty though.
