weird. i just noticed that the word "cauliflower" is spelled using the two phonetic ways the "aw" sound is written in the English language, "au" and "aw." wonder what "cauli" means. [NOTE: in Italian, the plant is called "coleflorie," and i guess that's the origin."]
this is an interesting, simple recipe that you could use when you're healed and have reached your goal weight and have a solid foundation of food and exercise to keep you at that weight. it actually came to my attention in a crawl across my screen while i was looking at another recipe, which i'll include in another post.
if you cook, you'll think of ways you can enhance this recipe, too. and remember, it's not the taco shell that is the problem in regular tacos, it's the stuff you put IN the taco shell that gets ya. if you're at a normal weight and have conquered the cravings and eating right is now second nature to you, you can have a taco or two. you won't be able to binge on them because you'll still have a pouch, but if you are sensible, you can enjoy something that tastes really good and is a perfectly okay lunch entree.
however, if the cauliflower is a substitute for protein, you might want to make sure you aren't shorting yourself on that nutrient. you might save calories over beef or beans, but you might be adding them without improving your nutritional value, too.
