Chicken Salad

14 oz Boneless, Skinless Chicken Breast (I slow cooked 2 breast, with 1T dry Italian Dressing Seasoning)
1.5 oz Apple, chopped
1.5 oz. Grapes, cut in half
3 oz. Onion, finely chopped
4 oz Celery, finely chopped
2 oz Cashew Pieces
1 oz Pepitas
4 T. Light Mayo
4 T. Greek Yogurt, Plain/Unflavored
Salt/Pepper to taste

Throw in a bowl and mix it up. Makes 10 4 oz servings.
