Crock Pot Gumbo

1 lb Chicken Breasts or Thighs (Boneless Skinless)
1 lb Smoked Andouille Chicken Sausage - or regular smoked sausage if you prefer.
1 Onion, Diced
1 Green Pepper, diced
1 Serrano Pepper (or a dash of hot sauce if you don't have a hot pepper on hand)
3 Ribs of Celery, Dicded
28 oz Can Diced Tomatoes
3 Garlic Cloves, minced
2 C Chicken Broth
1 T. Cajun Spice - store bought OR basic recipe below
1 t. Thyme
1 t. Oregano
1 C Rice, cooked
Combine all ingredients in the slow cooker; cook for 7-8 hours on low. Stir occasionally.
Add the Rice during the last hour of cook time, just to heat through and absorb some sauce.

** BASIC CAJUN SEASONING RECIPE
3 T. Salt
1 T. Black Pepper
1 T. Cayenne Pepper - use less if you don't like spicy!!
1 T. Onion Powder
2 T. Garlic Powder

This sounds so delicious, I want to make it. I wanted to ask you a question though. Does gumbo usually have okra in it? And while we're on the subject, what do you think of okra? I actually saw a rather involved video recently about preparation of okra. That is one vegetable I just cannot cook.
 
I have a vegetable gumbo recipe that I've yet to make that calls for okra but I don't think most gumbo necessarily has okra. I like this recipe so much, I'm not sure I'll ever make the veggie one. I do actually like okra and it would probably be a good addition. I have never made it, I have only eaten it if I'm out and they have it on the menu. Sometimes it can end up slimy so that's why I've never tried it at home. If a professional cook messes it up in a restaurant, what hope do I have at home? lol
