Eggplant waffles

Ok I know it sounds crazy, but I love eggplant parmigiana. This is a super scaled back, no red sauce or pasta included, version. Thinly sliced eggplant, a tablespoon of parmesan (like the kind you put on spaghetti), and a tablespoon of Italian shredded cheese. Wash the slice, dip it in the park, put it on a greased waffle maker, put shredded cheese on top, close waffle maker and set for 2 minutes. I like my cheese extra brown and crispy, so I did mine for almost 3 minutes. I don’t know the protein, calories, or fat, but it’s better than a deep fried hunk of eggplant LOL if you have a red sauce you like, you could dip this in that. I’ve been having fun with the waffle maker-as you can tell LOL

Dammit! I threw out the waffle maker I had last year, cuz who's making waffles all the time once they have the gastric bypass?!?! And now you guys are KILLING me with all the chaffles and now THIS. That looks so freakin' good I have to go buy a new one. :p

Missy, I threw mine away too but when I first started hearing about Chaffles I wanted one of the mini ones that would be just my size. I figured $10 wasn't bad. Speaking of which, I think I might make some more Chaffles tomorrow, it's been a while.
 
My basic chaffle recipe is 1 egg and 1/4 cup shredded mozzarella or cheddar. This makes 2 in the mini waffle maker. I’ve added mushrooms, brussel sprouts, cooked bacon, and pepperoni on different occasions when I’ve made them.
