I was just reading the post on Corn on the Cob (YUM!) and how some use butter spray instead of actual butter. While that's not for me, it did get me thinking about the changes/adjustments we all make in our diets to make things healthier for us. For example,
I use half cauliflower when I make mashed potatoes now. Turnips work too, but they're too watery for my taste.
I add fresh grapes and apples to chicken salad instead of dried cranberries and use greek yogurt for half the (light) mayo.
What are some of your favorite swaps or exchanges that either take some calories away or add some much needed nutrients to your recipes?
