Ground Turkey Shepherd's Pie

1lb. Ground Turkey
1 med. Onion, chopped
1 t. Olive Oil (or whatever oil you prefer for cooking)
1 t. Butter
1 C. Peas and Carrots (fresh or frozen, cook them first. If you use canned, rinse to get rid of the excess salt they use)
1 T. Worcestershire Sauce
1 T. Flour
1/4 C Beef Stock
2 C Mashed Potatoes or Cauliflower ( I like to blend both)
1 t. Salt
1 t. Black Pepper

Saute Onions in Olive Oil and Butter until tender. Sprinkle Salt and Flour in. Add Ground Turkey and Worcestershire Sauce and cook until browned. Add Beef Stock, which should thicken to a gravy like texture. Add Peas, Carrots and Pepper. Put in a baking dish and top with the Mashed Potato/Cauliflower of your choice. Bake at 350 for apprx. 30 minutes until Potatoes/Cauliflower start to brown on top.

I made this recipe with a few alterations to make it plant based:
Use cauliflower mash, skip turkey and do impossible burger, veggie broth instead of beef, skip butter, skip worchester sauce. This recipe made 16 -four oz cups. I added cheese also (fat free) and got 145-160 calories and 10-14 grams of protein depending on the cheese. VERY DELICIOUS!!!
 
That really sounds so delicious, and adding cheese to boost the protein is a great idea. I will add this to my future recipe tries. How does mashed cauliflower compare to the taste of mashed potatoes?
It’s definitely thinner and not as flavorful, but I use Italian seasoning and garlic powder to “help”. You can also do half mash potatoes and half cauliflower- that was in the original recipe- but the calories will increase. I use cheese in a lot of recipes, makes food more palatable and increases protein.
