Ground Turkey Tacos

1 lb Lean Ground Turkey
1 t Olive Oil
1 Onion, chopped
2 Garlic Cloves, chopped
2 Bell Peppers, chopped (I use a red and a green)
1 28oz can Black Beans
2 C Salsa
Packet of Taco Seasoning
OR
Homemade Taco Seasoning Recipe
1 T Chili Powder
1/4 t Garlic Powder
1/4 t Red Pepper Flakes
1/4 t Oregano
1/2 t Paprika
3 t Cumin
1/2 t Salt
1/2 t Black Pepper

Heat large skillet with olive oil. Saute onions, garlic and bell peppers until onions are translucent. Add in ground turkey, cook until browned. Add in salsa, beans and taco seasoning. Heat through.
Serve on a low carb tortilla or as a healthier option, wrap in a lettuce leaf.
This makes approx. 10 half cup servings, is even better the next day and luckily, freezes well.
 
Are you on soft food stage yet.?
Yes, I started on Thursday. Going well so far, although I had a piece of meat I didn't chew enough that felt like it was stuck at the top of my stomach. It was VERY uncomfortable for about 30 minutes until it apparently slid down. I've been eating mostly vegetarian dishes and supplementing with protein as needed to meet my daily goals. It's been going well.
 
I got I got a piece of meat stuck in my gullet about six months after surgery. Man that was unpleasant. That the only cure was drinking water. The water filled my esophagus and then I threw up. That loosened the wad of meat. I've also had to stick my finger down my throat but I don't have a gag reflex so it doesn't result in vomiting. It's a lesson learned.
 
That sounds great. How long ago was your surgery. Were you able to keep it down. (My biggest fear) Thank you for sharing this with us.
I had surgery on 6/22 so 8 weeks ago today. I have been on solid/regular food for 2 weeks. I have not had too many problems with any foods. I have food that ground turkey/chicken is much easier to handle than beef. At least for me. The key seems to be to eat slowly and chew and chew .. and then chew some more. lol
