I just posted a video on my YouTube channel with my favorite meatless meatball recipe. I'm not vegetarian, but I love these "meat"balls so much that I don't make them with meat anymore. My wife and daughter are both vegetarian, so it does make it easier if we are all eating the same thing.

Here's the recipe, it's pretty simple, but quite good. Of course, you could certainly do this with meat. I'd recommend 1/2 beef and 1/2 pork, if you go that route.

Impossible "Meat"balls Ingredients
24oz Impossible Burger
1/2 cup Almond Flour
2 tablespoons olive oil
2 eggs
1 onion, diced
1/2 C fresh parsley, chopped
3 cloves garlic, crushed
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon red pepper flakes
1 teaspoon dried Italian herb seasoning
2 tablespoons grated Parmesan cheese
Steps
Mix all ingredients together in a large bowl. Cover and refrigerate for about one hour.
Preheat an oven to 425 degrees F (220 degrees C).
Form meat mixture into balls about 1 1/2 inches in diameter.
Arrange onto prepared baking sheet.
Bake in the preheated oven until browned and cooked through, 20 to 30 minutes.
