Is anybody familiar with seitan?

Sometimes called "wheat meat," this is a high protein food sourced from wheat, rather than soy like tofu or tempeh.

I was wondering if it might be a good protein alternative for those who continue to have difficulties with beef and/or other meats.

I've been checking around but, so far, haven't found much bariatric-specific information. I would think a bariatric nutritionist would know something about it.

I did find a post on obesityhelp by a woman, 5 months out from rny who could not eat chicken or beef but had no problems with seitan.

Hi Qaterra,

I never heard of it before now but went and looked it up. If you are gluten intolerant you will not be able to use it because it is made from wheat gluten. A 4 oz serving gives you 26 Grams of Protien, 2 Grams of fat, and 10 Grams of carbs, and a total of 160 calories. I saw some sites that give you recipes as well. Is used to replace meat especially for vegetarians. There is lots of info out there about it.
