Pumpkin Pie Cheesecake Pudding

2 boxes Sugar Free Cheesecake Pudding
4 C. 2% Milk
1 package of Neufchatel Cheese
16 oz. Can Pumpkin Puree
2 t. Pumpkin Pie Spice
6 squirts of Torani Brown Sugar Cinnamon Sugar Free Syrup* (also excellent in oatmeal!)
1 t. Vanilla Extract
Using a mixer (or elbow grease) beat all ingredients together for 2 minutes. Makes 12 4oz servings.

I crushed 3 graham crackers broken evenly into quarters and used that to top each serving.

*If you don't have this on hand, use an extra teaspoon of cinnamon and 3 -4 packets of your favorite sugar substitute.
 
I don't know the nutritional statistics on Neufchatel Cheese vs yogurt cheese oh, but you can buy yogurt, put it in cheesecloth, then put that in a wire mesh strainers, and put that over a bowl. Let it drain overnight and in the morning the bowl will have wheeyey in it and the yogurt will have become thick and just like cream cheese very weird. I haven't baked with it but I can't tell the difference between it and cream cheese on a bagel or toast or whateverer.
