Yes, I'm a raman lover. Actually I've never met a noodle I didn't love. As a kid we ate raman packets somewhat regularly, lots of water broth, crackers, soy sauce, occasional egg, etc. As an adult I weaned myself off the crackers & soy sauce but I traded it for a sandwich to dip into, like a redneck french dip.
These days my kid and her generation seem to be a no-broth, noodle-only crowd. I like it just fine that way also, but I always enjoy sipping on the broth.
Anyways, a few years ago looking for low-carb substitute food options one of the "winners" for me was Pasta Zero. It's a shirataki noodle extruded from some yam in japan or something. Almost zero calories, it's mostly fiber and water. It makes an excellent raman noodle substitute.
The noodles themselves have little to no flavor, so whatever you add them to is how they will taste. When you cut open the bag you will want to drain them in a collander and rinse them; they have a mild salty-seaweed odor. They are also a very long extruded product, so I like to cut them with scissors so eating them isn't a huge slopfest getting soup all over my face slurping.
Texture-wise...they are sort of like rubber bands; they have a very springy, bouncy feel and you can almost hear them squeek as you chew (imagine rubbing two sandwich pickles together).
However, start off with a base of chicken stock or broth, diced carrots, cellery, peas, onion, bell peppers, corn, maybe add some basil and you get a very nice raman substitute for practically no calories at all.
I've used these as spaghetti noodle replements a few times also, but these noodles don't grip sauce very well so you kinda end up with "wattery" spaghetti and then a plate of sauce. It works, but less successful as a replacement vs raman.
Walmart in my area sells this in the reefer vegetable section next to the Tofu.
