Summer Soup

I used to live on this in the summer.

Gazpacho
========================
In a big bowl, pour in 1 large bottle tomato or V-8 juice.

Add a tablespoon of olive oil, chopped or minced vegetables like celery, scallions, tomatoes, sweet peppers and others that grow fresh in summer. i don't recommend corn, but if you can get fresh peas, a handful would be delicious.

Taste and season with s&p, a squirt of lime, hot sauce, a dash of Worcestershire--and/or some seasoning mix. Don't overdo it!

Chill until crispy cold.

Eat in the shade of an olive tree in your back yard.

Don't know how soon after surgery I can have V8 juice but I'll def be making this after I heal. Kinda a cross between a bloody mary & a great salad/salsa. Maybe a small spoonful of horseradish to go with. Yummy

I forgot an ESSENTIAL ingredient: parsley! I think you add about 1/2 a bunch, finally chopped or pulverized in a blender with a cup of the soup, then added back in. Parsley gives gazpacho its mad, fresh flavor.
