There are a couple tortilla brands out there with really, really great macro nutritional content for those interested in lowering caloric intake. These are solid options for diabetic / carb conscious folks
Mission brand, carb balance series tortillas. Sold at wal mart, and my go-to option.

Protein 5g
Carbs 19g
Dietary Fiber 13g
Net: 6g carbs
My family has been eating these exclusively for the past 3-4 years. No they aren't as stretchy & chewy as the raw delicious ones, but they are 90% as good and the flavor is all there. Great for wraps, also great to cut / tear up and use as chip substitutes, dip them in hummus, etc. Look at that fiber! And bonus protein! There's a few different sizes, and you can also get in white or wheat, with similar but varying nutritional content.

These are a softer, wheat variety but with equally impressive nutritional content. They don't stretch very well, but are awesome for wraps & chips. I have ordered these from amazon a number of times, but they have since become available at the Kroger stores.
Stuff I routinely make using either of these -
Basic sandwich wrap...meat or tuna/chicken salad, pickle, cheese, fresh spinach & lettuce, cherry tomatos. Use enough vegies to not need mayo.
Breakfast Burrito - scrambled egg, cheese, crumbled sausage or bacon, salsa
Quesadilla - cheese, or add left-over chicken breast pieces
Burrito or taco (the super obvious choices) chicken, shrimp, black bean, refried bean, steak, grilled peppers, mushrooms, onions, forever and ever...
Enchiladas - buy the old el paso green or red enchilada sauce and follow the super easy recipe on can
Pizza...yeah, smear a little spaghetti sauce, sprinkle cheese and add some other toppings as desired. Bake 425 for 5-8 minutes until desired crispiness.
Chips..cut them up or just rip into pieces. Dip into hummus, roasted red pepper Sabra is my all-time favorite. You need healthy fats.
