Finally on soft foods ! YAY! To celebrate I made Turkey Chili.
1 lb. Ground Turkey
1 T. Olive Oil (or cooking spray of your choice, if you have less lean turkey.)
1 Yellow Onion, chopped
1 Red Pepper, chopped
1 Yellow Pepper, chopped
2 Cloves Garlic, chopped
2 cans Dark Red Kidney Beans (drained and rinsed)
1 28 oz can of Crushed Tomatoes
1 can original Rotel Diced Tomatoes
Homemade Chili Seasoning -
4 t. Chili Powder
1 T. Red Pepper Flakes
1 T. Onion Powder
1 T. Granulated Garlic
2 t. Cumin
2 t. Parsley
1 t. Salt
1 t. Basil
1/4 t. Black Pepper
In a skillet, heat the oil. Add onions and peppers saute until onion is translucent. Add turkey and garlic, cook thoroughly.
At this point, you can add all the ingredients in a large dutch oven and simmer them on the stove for 45 minutes or so OR you can throw it all into a slow cooker and cook on low for 6-8 hours. You can add a half of a cup to a cup of water to the mixture if you like your chili on the thinner side.
