I made a frittata this morning that was absolutely delicious. I’ll have breakfast for the next 3 mornings too.
10 inch cast iron skillet
6 eggs
1/4 cup milk (I used 1 percent)
2 cups fresh chopped spinach
1/2 small shallot
2 cloves garlic
1/4 teaspoon salt
Pepper
1/3 cup feta
sauté onion first with a little olive oil, add garlic, chopped spinach and roasted red pepper.
Wisk the eggs, milk, salt and then pour on top of vegetables in the cast iron skillet. Sprinkle the feta on top and bake in a 400 degree oven for about 15 minutes or until the eggs are set.
