I am officially in the soft food plan and made white bean soup for dinner. It was delicious and the tastiest dinner I’ve had in weeks. I omitted the celery and added a couple of peeled diced potatoes. I’m not supposed to have celery now.
- 1 tablespoon olive oil
- 1 large onion chopped
- 1 teaspoon garlic powder
- 2 large carrot chopped
- 1 celery rib chopped
- 5 cups vegetable broth
- 1 teaspoon dried thyme
- ½ teaspoon oregano
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 4 chicken broth cubes
- 3 15-ounces canned white beans drained and rinsed
- 2 cups baby spinach
- Grated parmesan cheese for serving
