Spaghetti Sauce & Roasted Eggplant

Howdy! I decided to roast 2 eggplants in my airfryer to see what would happen. LOL. And boy was I rewarded.

I HIGHLY recommend peeled chopped roasted eggplant as an occasional alternative to noodles or zoodles with your favorite spaghetti sauce. It acts like little happy sponges that soak up all the flavor. It was also pretty exciting to use fresh basil and parsley from my own garden. Can’t wait to go to the farmers market next week to buy some more!

I love eggplant! I enjoy “breading” it with Parmesan cheese. Mmm, might have to make that this week!

Omg I love eggplant too. Especially roasted. Gotta try this in my air fryer. I used to peel, bread in Progresso Italian breadcrumbs with egg wash, and pan fry eggplant slices in olive oil. This sounds like a healthy alternative. Yum - thank you for sharing the idea.

You’re welcome! My son jokes with me that if I wrote a cookbook it would be called Walk Away since I have a tendency not to want to cook things that keep my at the stove! Lol. The air fryer is the perfect piece of kitchen equipment for me. Set the timer and walk away!
