Zucchini Pie

3 C Zucchini, shredded
1/2 t Salt
4 Eggs, lightly beaten
1 C baking mix (bisquick etc)
1/2 C finely chopped Sweet Onion
1/2 C Butter, melted
1/2 C White Cheddar
1/2 C grated Parmesan
1 t chopped, fresh Rosemary
1 t chopped Parsley
1/2 t Pepper

Add salt & zucchini to a bowl. Let stand 15 minutes. Wring out excess liquid.
Preheat oven to 325 and grease a 9 inch pie plate. I used 9X13 cake pan for smaller servings!
Combine all ingredients into a large bowl and mix well. Transfer to pie dish and bake approx 35-40 minutes.
