I found this recipe on a cottage cheese container today. I haven't made it yet but it sounds good.
2 cups low fat cottage cheese
1 package (10-12 oz.) frozen chopped spinach, thawed and well drained
1 cup shredded part skim mozzarella cheese
4 eggs, lightly beaten
1 jar (about 7 oz.) roasted red peppers, well drained and chopped
1/3 cup grated parmesan cheese (dry type)
1 tsp. dried oregano
Preheat oven to 350 degrees.
Pour into 9" pie plate that has been lightly sprayed with oil
Bake 40 minutes or until center is set
