Recipes for Thanksgiving ????

I found this recipe for pumpkin pie - sugar free. I haven't tried it yet but I may give it a go for Thanksgiving:

 
How far out from your surgery are you? I am 4 1/2 months out and seem to be able to handle most foods but honestly Thanksgiving foods can tend to be heavy or richer than normal day to day eating so proceed with caution. If there are any favorites that you really want, then just know you can really only have a spoonful or two. For example I might go ahead and have stuffing but it will only be a heaping tablespoon with a little gravy. I am probably not making my homemade stuffing this year because it will be just my husband and I because of Covid. So this will be the first ever Stovetop stuffing I've ever made for Thanksgiving. But it is much, much lighter than my homemade and my husband doesn't mind so it works for me!
I am 5 months out and everything I eat so far is ok. I am cooking for 14 people all family . I am hopeing my older grandkids take the leftovers home. I am cooking the same food I make every year. I can not eat much so I will focus on the turkey. I am making pumpkin pie with fresh pumkin,wish me luck!

  • Portobello "Wellington" (aka, beef wellington without the beef)
  • Stuffing
  • Mashed potatoes, gravy
  • Sweet potatoes
  • Cranberry Sauce
  • Roasted Brussels Sprouts
  • Pumpkin Pie
Basically what we make every year to satisfy meat eaters and vegetarians. I'll eat what I usually eat, but just much smaller portions. I'll probably eat leftovers like I normally do, etc. I'm not going to try to make this something different than what it usually is, other than I'll just be eating less. I don't really care about the calories over the holiday and the day after. I'll be back to my "normal" routine by the weekend.

Thanks for the recipe it was good.My husband make a strawberry pie with savia instead of sugar ,it was very good you could not tell it was not sugar.
 
Anybody have any eggplant recipes? I find cooking it is a balancing act. Just a few seconds too many can turn an eggplant steak into mush.

I was at an expensively catered cocktail party where the waiters were passing burgers, the meat replaced with a thick filet of eggplant. It was amazing!

I dont need a parmigiana recipe, or a Greek dish. I'm looking for a genius who's elevated the bland vegetable to the star of the show.

Anyone?

p.s. a one-inch slice contains 36 calories and 1 gram of protein. Yowsa!
Diane, boil your eggplant in salt water till tender, drain and set on the side. I do a pound of shrimp, green onions, garlic, salt, pepper, a dash of cayenne. In a frying pan with a little olive oil. Saute till tender and done. Blend the eggplant with mixture, put in a casserole dish, sprinkle parmesan cheese or Italian bread crumbs on top, and bake at 350 for about 50 minutes to an hour. You can also slice it thick 1/4 to 3/8 inch, dip it in an egg wash and Italian bread crumbs, Lightly fry it, dip it in ranch dressing or put it on top of your pasta dish. Try your air fryer on this. Hope this helps. I also make a Christmas dressing with eggplant that is wow.
