JUST IN TIME FOR THE HOLIDAYS!!!
INGREDIENTS
1 - 15 OUNCE CAN PUMPKIN PUREE
2 LARGE EGGS
1 CUP SKIM MILK
**12 TO 16 PACKETS SPLENDA OR OTHER SWEETENER TO EQUAL 1/2 TO 2/3 CUP SUGAR
*1/2 TEASPOON GROUND GINGER
*1/2 TEASPOON GROUND OR GRATED NUTMEG
*1 TEASPOON GROUND CINNAMON
1/2 TEASPOON SALT (OPTIONAL)
* YOU CAN OMIT THESE SPICES AND REPLACE WITH 1 1/2 TO 2 TEASPOONS OF PUMPKIN PIE SPICE.
** I FOUND THAT USING 12 PACKETS OF SPLENDA MADE THIS PLENTY SWEET BUT IF YOU LIKE THINGS SWEETER THEN USE 16 PACKETS.
METHOD
Combine ingredients in a bowl. Mix until smooth by hand or with electric beaters on medium.
Pour mixture into a 8 or 9 inch glass pie pan that has been sprayed with a non-stick spray.
Bake at 350 degrees for about 30-40 minutes or when knife inserted into middle of pie comes out clean.
Let cool then cover with plastic wrap and refrigerate for several hours or overnight. Or you can eat it warm.
Makes 8 servings
