Tofu mayo

I found this recipe on-line and thought it would taste good. Since it has tofu there is some protein in it and it has very little oil compared to regular mayo. I have not tried it yet. You can add herbs and spices to suit your taste. I am planning on making some potato salad soon and am going to add a bit of dried dill. I think it would also taste good with fish and as a veggie dip!!!

I noticed the recipe said to use promptly so maybe it separates. If it does just stick it back in the processor or stir it up real good.

Ingredients
1 (12 ounce) package firm tofu, drained and cut into cubes
1/2 teaspoon sesame oil (optional)
2 tablespoons apple cider vinegar OR lemon juice (You can substitute any vinegar flavor of your preference)
1 teaspoon dry or prepared mustard
1 teaspoon salt (Adjust amount to your preference)
1/2 teaspoon pepper (Adjust amount to your preference)
1/4 cup peanut OR vegetable oil

Directions
Place the tofu, sesame oil, cider vinegar, mustard, salt and pepper into the container of a blender or processor. Blend until smooth. Drizzle the oil in a thin stream while blending until thick and pale.
